August Uncommon Tea’s Know by Heart | Tea Review

by Tea in Spoons

As much as I like a bold strong black tea, sometimes on a warm afternoon, I want a blend that is on the floral and delicate side.

Description: “A tea that is gentle and sweet like a summer breeze and sunlight-dappled cobblestone.”

Instructions: 190°f / 90°c | 3.5g | 10 oz | 4 – 5min | reinfuse up to two times

Review: What drew me to this specific blend was the unique combination of orange blossom, almond, and honey, which sounded like a pleasant afternoon sip. The dry blend smelled sweet and floral which reminded me of almond cookies with citrus notes.

After removing the lid from the cup, the brewed liquor smelled of almonds, apple juice, and spring flowers. The infusion was cloudy and a deep honey-yellow colour. The taste was dominated by almonds, floral/roses, and wild honey, reminiscent of marzipan. Since the company website said the blend would be nice iced, I let it cool in the fridge and the floral and almond/marzipan taste melded well together. Brewing the infused blend a second time using hot water, the liquor developed a faintly almond and sweet taste.

The wet leaves smelled like an orange creamsicle with almond, floral, and honey undertones.

This is a lovely sweet almond and floral blend and it was perfect for the afternoon! When I picked this blend, I was not aware it was named after a studio album of The American Analog Set. I was not familiar with the band, but I did listen to a few of the songs which had a nice mellow melody while sipping on the blend. I accidentally steeped this blend once with 8oz of water versus 10 oz, so the liquor had a much more intense marzipan flavour, which may be nice for anyone who enjoys a strong almond note. This blend is for anyone who enjoys almonds, roses, citrus, and honey, and specifically marzipan (3.5/5 rating).
